TOP DRY RED WINE

Illyricum 2016 is an ecological dry red wine from the opus of premium products.

The wine is a blend of cabernet sauvignon and plavac mali, grapes that come from an ecological vineyard in the bay of Vira, which we planted in 2012. Old Illyrian dwellings were found next to the vineyard, which gave the wine its name.

​Plavac Mali and Cabernet Sauvignon are vinified separately, then blended and aged in barrique barrels. In this way, the aromas of Plavac mali (dried plums and ripe grapes) along with elegantly polished and pleasant tannins are perfectly complemented by the aromas (red and black berries) and freshness of Cabernet Sauvignon. Spicy notes of oak (vanilla, tobacco) were moderately woven into the wine. Wine has aging potential. It has a deep ruby-garnet red color, pleasant acids and a long aftertaste.

It is served at a room temperature of 18° C. It is recommended with a wide range of moderate dishes, especially with beef, duck breast and various cheeses.

Plavac mali

TOP DRY RED WINE

Plavac Mali, as the name suggests, is obtained from the variety of the same name. This is our top line and expression of blueberry that we produce in better years and in smaller quantities.

Plavac is a small product primarily of terroir or the sum of natural influences in the vineyard.

Selected vineyards are located on the southern slopes of the island of Hvar (Ivan Dolac, Sv. Nedjelja, Jagodna). Top positions for plavac are on poor, stony, calcareous soil.
The ecological approach is imposed in these extreme conditions of steep, sunny vineyards - manual work, with minimal interventions in the vineyard and with small yields (from 0.5 kg to 1 kg) of top quality grapes.

The natural intensity of varietal aromas of dark and ripe blue fruit (cherries, plums), Mediterranean herbs and saltiness is rounded off by aging for 12 months in a combination of new and used French barrique barrels, adding notes of wood, spices, leather, and tobacco.

The plavac variety is a small cross between the dobričić and tribidrag/crljenak kaštelanski/zinfandel varieties.

The specificity of our Plavac mali is in the elegance of the 'French' type, because this wine tends to preserve both the classic aroma of Plavac mali, as well as a wine style that is less jammy and robust, and more focused on structure, balance and length of taste.

Caplar

TOP DRY RED WINE

Caplar wine is, as its name suggests, an innovative blend of cabernet sauvignon and plavac mali, in a ratio of 50-50%.

Plavac Mali from the southern slopes of Hvar and cabernet from our vineyards on the northern side of Hvar are vinified separately, after which they are blended and aged for six months in barrique barrels. The result is a wine with smooth tannins, in which the intensity and varietal aromas of Plavac are refined by the elegance and freshness of Cabernet. The characteristic aromas of plums, dried grapes, and earth are complemented by aromas of black currant, spices, and other nuances. We also predict that the wine has a greater aging potential than other Plavac wines. Each bottle proudly bears the winemaker's signature, which guarantees the thought printed on the label: ˝Made in conjunction with Hvar, love, and knowledge.˝

Veliki plavac mali

TOP DRY RED WINE

Veliki Plavac Mali is the last in a series of passionate projects of Andre Tomić - a wine that is produced only in exceptional years, filled only in magnums (1.5 l) and until now it was only possible to try it at the Tomić winery on Hvar.

Selected grapes come from prime positions for plavac mali, from poor, stony and calcareous soil on the southern slopes of Hvar. The ecological approach is imposed in these extreme conditions of steep, sunny vineyards - manual work, with minimal interventions in the vineyard and small yields (from 0.5 kg to 1 kg) of top quality grapes.

Varietal aromas of Plavac ̶ dark and ripe fruit, plums and cherries, Mediterranean herbs and saltiness ̶ are rounded off by aging up to 18 months in Slavonian barrique barrels. The wine is characterized by strength, robustness, high extract, but also structure and acids that balance the almost imperceptible 16% alcohol. As the wine ages, it also develops tertiary aromas, tobacco, leather, notes of mushrooms and forest floor.
