Our cellar is located in a newly built winery on a family property in the bay of Mina in Jelsa, a place with a long viticulture and winemaking tradition. Today, we produce between 130,000 and 150,000 bottles a year and, in addition to the members of the Tomić family, we employ another twelve Hvarans.
We nurture autochthonous varieties and knowledge, but we also experiment with new ones. We constantly improve the production of red, white and rosé wines with modern technology and strive for better. We pay special attention to the production of Prošek - the original Dalmatian dessert wine made from selected and dried grapes of the highest quality local varieties.
A self-control system - HACCP - is integrated throughout the entire production plant, which ensures the health safety of our products. (The Tomić winery is equipped with an operational laboratory where we analyze basic parameters as part of wine quality control during production and aging, and control of finished products is also carried out. The final analysis of wine for release is carried out in an external certified institution.)
In the cellar, next to the wines that mature in barrique barrels, Triklinij is also located. The triclinium is a space that we are particularly proud of: it is carved in stone, with travertine vaults and travertine columns, as was built in Diocletian's cellars. We intended it for ourselves, but also for everyone who wants to break away from the world for a while and experience Hvar's history, wine, and stone in their unbreakable connection.
